Each pack is measured at 50 grams (with some exceptions). The number of pieces can vary depending on each piece. Some pieces would be better enjoyed thicker to get a better sense of taste while others are done thinner not to overwhelm the palate. The size of the palette is approximately 21.5cm x 21.5cm.
While each pack is vacuum sealed for freshness, each product should be stored in the fridge immediately after receiving to maintain optimal freshness. As curing meats preserves food, it can last quite a while but it is recommended by The Meat Consultant to eat within 2 weeks (if not opened) and 2 days after opening.
What you do with the meat is purely up to you. Others have suggested pairing this with multiple other foods such as the usage of sushi rice or cured duck used as bacon. Use it how you wish but do some research before doing so.
Unfortunately, everything is limited as production is growing. If you’d like to know what is coming or when restocking happens, sign up for the waiting list on that item.
Requests can definitely be made depending on the viability and complexity of the piece that you want. Please send a message via the contact form or on any social media outlet and we’ll get back to you as soon as we can.
Pre-orders are a newer concept here and will develop over time. For now, you may sign up and put down a deposit for that piece. Updates on pieces will be disseminated via The Journal or social media. Please stay tuned there.
If there are orders that you would wish to make outside of conventional credit cards and Apple Pay, please feel free to send a message over with what you would like to purchase and alternative payment forms, such as PayMe, can be arranged.
How long does shipping take?
Once your payment has been received, it’ll take 1-2 days to process your order and you shall receive it on the day. However, this is to subject to change. If this is the case, you will be contacted about this.
